Blueberry Muffins

These Blueberry muffins are so yummy and delicious they are one of my hubbies favorite treats.  Of course, they are extra special when made with the blueberries from my garden. I started following Beth Baumgartner (@beth_thefirstyear) • Instagram photos and videos.

Her 4 tips on how to get muffins to rise is absolute genius.  Putting the muffins in every other hole in the muffin pan, letting the batter rest 15 minutes before baking, filling the muffin batter to the top and last but not least starting oven at 425′ for first 7 minutes, then turning down to 350′ for final bake time.  This was a game changer for my muffins they were always very yummy but just looked so sad.  Now they are puffed up domed and absolutely perfect.  Thank you, Beth for all of your fabulous tips.

Blueberry Muffins

1/2 cup softened butter

1 cup granulated sugar

2 large eggs

1/2 cup whole milk

1 teaspoon pure vanilla extract

Dry Ingredients

2 cups flour

2 teaspoons baking powder

1 teaspoon salt

2 cups frozen or fresh blueberries (personally I like to use frozen they don’t break apart in the batter)

Preheat oven to 425′

First combine all dry ingredients; flour, baking powder, salt.  I just stir the dry ingredients together with a whisk to combine and set aside. In a large mixing bowl (I do not use a mixer for this recipe I mix it all by hand) add softened butter and sugar, mix until light and fluffy; add eggs one at a time, mix until combined, add vanilla, then add all of the dry ingredients, do not over mix batter, stir in blueberries.  Let batter sit for 15 minutes.  Fill 12 cup muffin pan with 6 muffin liners (remember you only want to fill 6 out of the 12 muffin wells giving the muffins room to grow and not touch each other) Sprinkle each muffin with streusel topping or sanding sugar whichever you prefer. Bake at 425′ for first 7 minutes then turn oven down to 350′ for the last 12 to 15 minutes.

Streusel Topping

1/2 cup granulated sugar

1/3 cup flour

1/4 cup softened butter

1/2 teaspoon cinnamon

Mix all ingredients together until crumbly then sprinkle on top of muffins (streusel topping is optional you can also just sprinkle each muffin with sanding sugar)
